Couscous Hice traces back to a kitchen in Casablanca, where Fouad spent his childhood watching his mother, Saadia, cook. She’d teach him which spice belonged with each recipe, starting with her tagine, and he memorized all of it.
Years later, on his own, he started putting that knowledge to work. When he met his wife Soumia in Casablanca, she had never cooked an egg — but she had nearly two decades of her own in the food and beverage industry. Fouad passed his mother’s recipes on to her, and Soumia took them somewhere new: refining, experimenting, trying things, learning. The traditions held; she added her own. Today she excels at both.
Destiny brought Fouad and Soumia to Colorado. In April 2025 they opened Couscous Hice in Denver’s Park Hill neighborhood, bringing Saadia’s recipes, Soumia’s craft, and the warmth of the kitchen they came from to a new place.
The name “Couscous Hice” came from a feeling — a small house, the kind a mouse might call home, but with a much bigger heart. The tagline “A Break from Rice” came from a simple observation: everywhere we looked, people were eating rice, and couscous had been left behind. This is our way of bringing it back to the table.
